Rare Wine
Many restaurants have introduced port samplers, a flight or series of one-ounce pours of three or four types at a reasonable price. Perhaps the most persuasive image for this noble drink is the combination of port and stilton the sweetness and concentration of the wine is a marvelous contrast to the salty tanginess of cheese. A very old vintage ultimately becomes a tawny but with the complexity of bottle aging without oxygen. In fact, port is generally recognized as the only wine to drink with these dense, sweet confections. Standard port should be drunk within a year or two of purchase. Making matters even easier is the fact that, of those declared vintages, only a few are considered great: 27, 45, 63, 70, 77, 85 and 94. Other systems such as vacuum pumps provide limited conservation for a fine vintage port. Enjoy our vintage ports -- every sip.
