Fill about one-third of the glass, grasp the stem between your fingers and gently swirl the wine and smell the vintage port. In effect, these wines are not ready for drinking until they have reached 10, 20 or more years of age. This is also true in portugal where, during a visit to a quinta in the douro, you will find chilled porto branco with roasted almonds and olives offered before dinner.

Officially real port comes only from portugal, very much the same way that true champagne comes from wine from the champagne region of france. Those state of the art cellars cost a fortune and are dependent on electricity, but if you happen to live in a penthouse, then a basement is non-existent. Wood-aged ports are further aged before release in barrels, and thus are further developed, or oxidized, by the time they are bottled. Wines age gracefully, so try a vintage port and see how it pleases you. If, like me, youve taken the six minutes necessary to memorize the three vintages and the four producers, you have already learned enough to impress a client or silence a wine snob, depending on the occasion. |
