Penfold's Bin 707 Cabernet Sauvignon is a wonderful Australian Bordeaux-inspired red from the Barossa Valley. The Bin 707 style combines intense varietal definition with new American oak to produce wines of great richness, harmony and concentration.

Penfolds wine estate was founded by an English doctor (Dr Christopher Rawson Penfold), who migrated to South Australia in the mid-19th Century. Penfold had a firm belief in the medicinal value of port and sherry and began making fortified wine for his parents.

”At the same time, the other Australia Cabernet Sauvignon in the tasting, at 14-years of age, the 2002 Penfolds Bin 707 (100% Cabernet Sauvignon aged 14 months in new American oak) was spectacular. "Exotic, flamboyant aromas of kirsch, cassis, coconutty oak, chocolate and candied mint; the mint note builds with air but does not turn green. Large-scaled, fat and viscous in the mouth, displaying powerful, densely concentrated flavors of ripe cherry, blackcurrant, mocha, gingerbread and fruitcake, plus a wallop of bourbony, toasty oak. Sweet and long on the finish, with completely absorbed tannins. This became richer and thicker with air and may be the best example of a Bin 707 I've ever tasted."
